Packed with slow release energy for the school day

I love to serve this sweet tasting muesli up as a lazy breakfast when I don’t feel like making a cooked breakfast or smoothies. Perfect on a busy school morning, and packed with slow energy release oats. It’s refined sugar free, dairy free, and so much more nutritious than store brought sugar packed cereals. You can change the recipe ingredients to suit the likes of your family.  

 

Ingredients

250g rolled oats

1/2 cup of seeds (I used sesame, pumpkin & sunflower)

1/2 cup of organic coconut (desiccated or thread)

2 heaped tablespoons of coconut oil

2 heaped tablespoons fair trade cocoa powder

2 heaped tablespoons of honey (I used manuka)

a good pinch of cinnamon

Method:

  • In a medium sized pot gently melt the coconut oil and honey, add the cocoa powder, and cinnamon and bring to the boil.  
  • Boil for 1 minute stirring constantly.
  • Remove from the head and add the oats, coconut and seeds. 
  • Stir well to combine.
  • Let cool, and store in an air tight container, or glass jar. 

This is so delicious served with a nut milk, and sliced bananas.  You could add more coconut and less seeds, or swap the seeds for chopped nuts. So easy!
